Temper 200 Grams of Callebaut Chocolate on Marble for a Glossy Snap
Callebaut 811 dark callets are sold at 54.5 percent cocoa, and a 200 g batch gives enough mass for marble tabling without taking over a home slab. The working path is narrow: melt to 45 C, cool to 27 C, then bring the chocolate back to 31 to 32 C. Drift two degrees too high at the end and the glossy set can turn into grey streaks within an hour.
Callebaut 811 dark callets come in bags marked 54.5 percent cocoa. For tempering, the critical part is the cocoa butter within that chocolate. Roughly 34 to 39 percent of the mass is fat, and that fat can set in six crystal forms. Tempering steers it toward Form V, also called beta, the crystal form that gives a finished bar its clean snap and polished surface.
Form V melts at about 34 C. Less stable forms liquefy at lower temperatures and leave chocolate with a weaker set; grey bloom appears when the fat migrates and recrystallizes poorly at the surface. Marble tabling remains one of the oldest dependable ways to make Form V without a tempering machine. A 200 g allocation is also large enough to handle on a domestic slab without the chocolate cooling beyond control in seconds.
Weigh the reserve before heating
Split the 200 g before any heat is applied. Keep 50 g of unmelted callets aside. That quarter is the seed supply for the no-slab method and for correction if a batch needs stable Form V crystals introduced later. Skipping the reserve is a common reason a home batch never gets back into temper after the melt.
Melt the remaining 150 g over a bain-marie or in a microwave. If using a microwave, work in 30-second bursts and stir between rounds so the heat spreads through the callets. Stop when the pool reaches 45 C on a digital probe thermometer. A Thermapen or another instant-read thermometer accurate to 0.5 C is precise enough. Cheap dial thermometers often lag by two to four degrees, exactly where the difference matters.
Keep the melted chocolate between 45 and 50 C. Do not push it above 55 C, where the cocoa butter can scorch. Water makes a separate problem: condensation from a bain-marie lid can turn the batch grainy and unrecoverable if even a bead drops in. Every utensil that touches the chocolate needs to be dry, and steam should stay away from the bowl.
The 45 C, 27 C, 31 C curve
Dark couverture follows a tight temperature path. Melt to 45 C, cool to 27 C, then rewarm to a working range of 31 to 32 C. Milk chocolate runs about two degrees cooler at each stage. White chocolate runs about three degrees cooler because added milk fat and milk solids lower the crystallization points.
For 811 specifically, Callebaut prints 31 to 32 C as the working range on the bag. Treat the top of that range as a ceiling. At 34 C, the Form V crystals you just formed have melted again, putting the chocolate back at the start of the tempering process.
Cooling to 27 C forces stable crystals and less stable crystals to appear in the melted cocoa butter. The short rewarm to 31 C removes the low-temperature forms first, leaving the Form V seed available to guide the rest of the set. If the cooling step takes too long, too few seeds form. If the chocolate drops below 26 C, it can thicken into a paste that will not pour cleanly. The useful window is about one degree in either direction, which gives the thermometer a real job on the bench.
What happens on the slab
Marble or granite stays cool and draws heat out of chocolate much faster than a bowl. That heat pull is the point of tabling.
Pour about two thirds of the 45 C melt onto the slab, roughly 100 g. Keep the remaining 50 g of melted chocolate warm in the bowl off to the side. Spread the pool with an offset palette knife until it forms a thin layer, then scrape it back toward the centre with a bench scraper. Repeat the motion without rushing.
The chocolate cools fastest while it is spread thin. When it is gathered, the cooler edge material folds into the warmer centre. The scraping also keeps the cocoa butter moving through the cooling phase, so crystals form throughout the mass instead of setting in isolated cold patches on the stone.
Use the thermometer, but watch the texture too. Around 30 C, the chocolate still flows freely and keeps its gloss. Between 28 and 27 C, it starts to resist the scraper. The shine drops back, and the feel changes toward a matte, fudgy drag. That change is the visible sign that seed crystals are forming.
When the tabled chocolate reads 27 C and begins to stall under the scraper, stop working it on the slab. Scrape it back into the bowl with the reserved warm 50 g of melted chocolate and stir thoroughly.
The warm portion should lift the combined temperature toward 31 C while the stirring spreads the seed crystals through the whole melted batch. If the blend stops at 30 C, set the bowl over the bain-marie for two or three seconds and check again. If it climbs past 32 C, table a small portion again so new seed crystals are present.
The slab temperature matters. Marble that has been sitting in a warm kitchen will pull heat too slowly for this method. Some workers chill the marble briefly, though a slab below 18 C can shock the fat and set the chocolate before the spreading is finished. Room-temperature marble around 20 C is the more reliable middle ground.
A fast temper test
Dip the tip of a palette knife or a strip of baking parchment into the chocolate and set it aside in a 20 C room. Properly tempered 811 should become firm and glossy within three to five minutes, with no streaking.
If the smear is still tacky after ten minutes, the temper has failed. A dull surface or grey marbling points to the same problem: the wrong crystals are controlling the set. Test before filling a mould, because the smear costs almost nothing compared with a full pour.
Bloom after the mould
A batch can pass the parchment test and still bloom overnight. The usual cause is storage temperature moving above the Form V melting point after the chocolate has set.
Fat bloom is the grey-white film that appears when cocoa butter melts, migrates, then recrystallizes in an unstable form at the surface. A moulded bar can develop it if it sits somewhere that climbs past 34 C. A different defect, sugar bloom, can occur when chocolate goes from a 6 C fridge into a 24 C room and condensation forms. Moisture dissolves surface sugar, leaving a grainy finish after it dries.
Finished pieces keep their Form V structure for months when stored at 15 to 18 C, away from sunlight and the oven. Bloomed chocolate remains edible and safe. What it loses is the snap and shine that tempering was meant to build, and re-tempering is the only fix.
Batch size and the seeding route
Below about 150 g of total chocolate, marble tabling becomes unreliable. The film on the slab cools too quickly to control, and the reserved seed becomes too small a share of the batch to manage accurately. A tempering machine or the seeding method suits small amounts better.
The seeding method reaches the same Form V crystal target without a slab. Melt 150 g to 45 C, then remove it from the heat and stir in the reserved 50 g of solid callets a handful at a time. Those cold callets already contain stable Form V crystals. As they melt, they cool the batch toward 31 C while introducing seed directly into the liquid chocolate.
Keep stirring and checking the temperature. Once the added callets have dissolved and the reading holds at 31 to 32 C, the batch is tempered. If solid pieces remain when the chocolate has already reached 31 C, lift them out so they do not become lumps in a mould.
Seeding removes the physical work of spreading chocolate on stone and gives tighter thermal control, so chocolatiers use it for larger volumes where kilos of chocolate would be awkward on marble. It also handles a warm kitchen better and needs less equipment. Its weakness is the condition of the seed callets themselves. A bag that has bloomed in a hot cupboard carries poor crystal structure into the melt.
For the marble method, the seed is built fresh on the slab, which avoids that particular risk while demanding a cool surface and steady handling. With seeding, the bag’s history enters the bowl with the seed.
